Cellaring: Drinks beautifully now
Alcohol Content: 14%
Winemaking: pH:3.49, TA: 6.28, Residual Sugar: 0.54 g/L
Cabernet Sauvignon selected from premium Margaret River were fermented separately in small stainless-steel vessels. Fermentation duration of 10-12 days, starting cool then finishing warm with gentle maceration throughout to extract colour and subtle tannin development. Subltle oak maturation to increase flavour complexity.
We use a lightweight bottle, that significantly reduces our carbon footprint
