Our vineyards are
located on four separate properties within the Margaret River
region, ranging from Wilyabrup in the central part of the
region, down to Karridale in the south and Carbunup and
Yallingup in the north. Each of the Night Harvest wines is
sourced from fruit from one or more of these vineyards plus a
small group of contractors. This allows our winemakers great
flexibility in blending options. The Wilyabrup property
produces outstanding cabernet sauvignon and chardonnay, which
make up the super premium Single Block range of Night Harvest

Wine (from Latin vinum) is an alcoholic beverage made from
grapes, generally Vitis vinifera, fermented without the
addition of sugars, acids, enzymes, water, or other nutrients.
Yeast consumes the sugar in the grapes and converts it to
ethanol and carbon dioxide. Different varieties of grapes and
strains of yeasts produce different styles of wine. These
variations result from the complex interactions between the
biochemical development of the grape, the reactions involved
in fermentation and the terroir.
Winemaking
Night Harvest wines are essentially 'made in the vineyard', and are delivered as ripe, fresh grapes in pristine condition to our winemakers. The overall philosophy is to handle the grapes with delicacy and minimal input and the entire range of wines all carry the imprint of their variety, their site and the seas.
Our Vineyards
We source grapes for our wines from a variety of vineyards, either owned by our team or contracted to us. These vineyards have been identified for their capability to produce the quality and quantity of varieties needed for the Night Harvest range. The micro-climate of this site, with its slightly cooler winters and warmer summers brings out the best for this Mediterranean red variety. An organic mulching program is also resulting in some astounding results with Sauvignon Blanc and Merlot. Ridge Farm, Wilyabrup Located in the dress circle in the centre of the Margaret River region, WIlyabrup has particular track record in high quality Cabernets, Shiraz , Semillon and Chardonnays. Our block is on a gentle north facing slope, protected by native forests on the southern side and close to the cooling sea breeze coming in from the southwest. Rockfield, Karridale Karridale is the southernmost end of the Margaret River appellation.

Region Overview
Margaret River needs little introduction to lovers of fine Australian wine. Blessed with an almost perfect maritime climate, the prevailing Indian Ocean breezes temper the heat of summer, allowing grapes to ripen perfectly, with excellent natural acidity and full flavour spectrums. The effect of these ocean breezes on night time temperatures is particularly significant in the development of grape flavour and quality. Covering an area around 90km north to south, and 45km west to east, the region is made up of five sub-regions, each with slightly differing attributes in terms of ripening periods, and acid and flavour profiles. The ancient soils are made up of gravel loam over clay, ideal for vine health and the growth of concentrated, intensely flavoured berries.
