Winemakeing: Each parcel of fruit is gently crushed into small open fermenters with traditional heading down boards where fermentation is carried out under strictly controlled temperature conditions. Gentle extraction is achieved by the draining of wines from skins and returning back over. French oak staves used to add complexity.
