Wines

In the cool of the night, optimum harvest conditions prevail revealing well balanced  sugar levels, the grape's natural aromatics are at their peak, and the cool environment for transport allows the fruit to arrive at the winery as fresh as it was when it was picked. The overall philosophy is to handle the grapes with delicacy and minimal input and the entire range of wines all carry the imprint of their variety, their site and the season.

Shiraz

VARIETY : 100% Shiraz
REGION : Margaret River
OAK : Mainly French oak barrels with a small amount of American.
ALCOHOL : 13.9%
COLOUR : Deep garnet red
AROMA : Fresh Blueberries, orange blossom and white pepper
PALATE : Voluptuous tannin, smooth coating on entry and driven forward by concentrated fruit and French oak elegance. The finish is both rich and pure, leaving a cedar and rose-water twist to finish
WINEMAKING : The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The fruit is de-stemmed with no crushing of the berries so that we begin "whole berry" fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste. The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. This wine was matured and aged for 17 months before bottling during the Winter of the following year.

Cabernet

VARIETY : 100% Cabernet Sauvignon
REGION : Margaret River
OAK : 18 months in a selection of fine grained French oak barriques from specially chosen forests. 50% new oak; 30% 1 year old and 20% 2 year old barrels. The Malbec is barrel fermented in 500 litre puncheons.
COLOUR : Deep garnet red
AROMA : Lifted red berry and cedar
PALATE : Elegant natural tannins, some floral qualities over plum and gravelly depth. A fine balanced wine, with a long palate that shows finesse.
WINEMAKING : Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions.

Chardonnay

VARIETY: 100% Chardonnay
REGION: Margaret River - Wilyabrup
COLOUR: Golden Straw
AROMA: Aromas of grapefruit, ripe peach and roasted nuts abound, gently followed by delicate tones of citrus blossom with a flinty minerality.
PALATE: The palate is focused and clean, boasting hints of white pear and creamy oak with a lasting, pure finish.
OAK MATURATION: 100% in French oak barriques; 40% new; the balance 1 and 2 year old barrels for 10 months.
WINEMAKING: Fruit is hand-harvested in the cool of the night then transported quickly to the winery. The whole bunches are then gently pressed to extract only the purest juice with the finest textures. The juice is allowed to settle for 2 days before being racking to achieve the desired level of solids in the juice. Fermentation is started in stainless steel tanks before being transferred into French oak barriques where it finishes fermentation and undergoes battonage and aging for 10 months before being bottled.

Sauvignon blanc 

 COLOUR Pale Straw
AROMA Intense gooseberry and guava notes highlighted by fresh citrus overtones
PALATE Full, fresh, crisp palate, with well balanced acidity. Dominated by the tropical fruit flavours that linger on the palate with a zesty citrus finish
WINEMAKING Fruit picked cold in the coolness of the night. Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was de-stemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with the idea to maximise it s potential prior to blending.
